In keeping with our Dutch theme this week, we have recently tested both TAPIOCA FLOUR and BUCKWHEAT FLOUR, to confirm their FODMAP levels. In The Netherlands, these starches are popular ingredients in many desserts. In particular, both are often used to make Dutch pancakes, also known as ‘poffertjes’. Typically higher in carbohydrates, and lower in protein, both tapioca and buckwheat flours are often also used []
