Easy Low FODMAP Vegan Peanut Butter Cookie Recipe
To celebrate the Lo Fo Pantry launch, we’re sharing this low FODMAP recipe that’s so easy, kids could make these cookies!
Thanks to the Lo Fo Pantry, baking on the low FODMAP diet just got a whole lot easier!
Not only are they made from low FODMAP ingredients, they are also vegan!
Serves: 5 (10 cookies)
Ingredients:
- 6 Tbsp Lo Fo Pantry Low FODMAP Plain Flour
- ½ Cup Peanut Butter
- ½ Teaspoon Baking Soda
- 2 Tbsp Rice Malt Syrup
- 10 Brushed Almonds
- ½ Tsp Vanilla Extract
Steps:
- Preheat oven at 180 degrees Celcius.
- Sift Lo Fo Pantry Low FODMAP Plain Flour into a large mixing bowl.
- Add rest of ingredients into mixing bowl. (Peanut butter may need to be melted slightly).
- Using hands, mix until the mixture is homogenous.
- Roll 3cm diameter balls and place onto a lined baking tray.
- Flatten each ball slightly, and push some pieces of almonds on top of each cookie.
- Bake for 15-20 minutes until golden brown.
