Low FODMAP Dairy Free Burrito Bowl

Craving a burrito but don’t want take out? Let’s make a healthy dairy free and low FODMAP burrito bowl. This quick and easy recipe even demonstrates how to make your own guacamole from scratch!

Low FODMAP Dairy Free Burrito Bowl

Prep time: 25 minutes
Cook time: 40 minutes
Serves: 2

Ingredients:
400g ground beef
1 ½ cup chopped iceberg lettuce
1 ½ cup white rice
¼ cup corn kernels
2 tbsp. Bay’s Kitchen Spicy Tomato Salsa
2 cups La Tortilleria Tortilla Chips
1 cup Liddell’s Lactose Free Cheese Shred
2 cups of water
1 tbsp. vegetable oil

Low FODMAP Guacamole
1 ripe hass avocado
4 cherry tomato finely chopped
1 tsp of FreeFOD Garlic Replacer
½ tsp of FreeFOD Onion Replacer
¼ tsp salt/pepper to taste
1 squeeze of lemon juice to taste

Method:.

  • 1. Heat a pot on the stove with the water at high temperature, once boiling add the white rice
    2. Cook white rice for 15-25 minutes on the stove, once boiling lower the heat to a simmer and cover. Simmer until the water is completely absorbed.
    3. While the rice is cooking heat the oil in a pan on high, add ground beef and cook for 10 minutes or until browned.
    4. Cook the corn kernels in the microwave for 3-5 minutes
    5. Wash, dry and chop the iceburg lettuce then separate into two equal bowls
    6. Add desired amount of cooked rice, ground beef and corn kernels to each individual bowl
    7. Add Cheese, Salsa, Guacamole and Tortilla Chips
    8. Then enjoy!
  • Guacamole method:
    1. Cut and remove the flesh of the avocado and mash with a fork to a smooth consistency.
    2. Add all remaining ingredients to the avocado and mix until combined.
