Low FODMAP Chicken Salad

Whether it is summer or winter, this low FODMAP chicken salad recipe is a great way to reminisce about summer and can be enjoyed all year long! In summer, cool the chicken before adding to the salad for a refreshing lunch. Or in winter, add the chicken to the salad while still warm to provide a warm, tasty meal.
Traditionally, this chicken salad would be made with mango as the key ingredient for flavour. However, mango is a high FODMAP fruit. Instead, we have substituted fresh mango for Mamaji’s Mango Exotic Simmer Sauce. We have also added strawberries, avocado and lemon juice to give the salad a great summer taste! For that garlic and onion flavour, without the high FODMAP fructans from actually onion and garlic, add the Cobram Estate Garlic and Onion Infused Extra Virgin Olive Oil.
Low FODMAP Chicken Salad
Serves 4
Prep: 1 hour to marinate chicken, 15 minutes to prepare salad
Cooking: 10 minutes
Ingredients:
Chicken:
- 300g Chicken breast
- 1 jar Mamaji’s Mamaji’s Mango Exotic Simmer Sauce (or another low FODMAP marinate, look for another fruit flavoured marinate such as mango, pineapple or citrus)
- Salt and pepper to season
- ½ tbsp Cobram Estate Garlic and Onion Infused Extra Virgin Olive Oil
Salad:
- 2 cups spinach
- ½ cup cherry tomatoes
- 1 cup cos lettuce
- Handful of coriander
- 1 spring onion (green part only)
- ½ cup cucumber
- ½ cup strawberries
- ½ red capsicum
- 1 avocado
Dressing:
- 2tbsp Cobram Estate Garlic and Onion Infused Extra Virgin Olive Oil
- ½ tbsp lemon juice
Method:
1. Slice the chicken breast into bite-sized pieces.
2. Marinate the chicken breast in a bowl for 1 hour with the jar of Mamaji’s Mango Exotic Simmer Sauce, with salt and pepper to season.
3. Add the extra virgin olive oil to a frypan on medium heat.
4. Add the marinated chicken to the pan and cook for 5 minutes. Ensure the chicken is cooked by slicing open a piece of chicken and checking it does not have a pink colour in the centre
5. Once cooked, remove the chicken from the heat and set aside to cool.
6. Rinse the vegetables under water and dry.
7. Add the spinach and cherry tomatoes to a large salad bowl.
8. Chop the cos lettuce, coriander, green onion, cucumber, strawberries and capsicum and add to the bowl.
9. Mix the salad together.
10. Slice the avocado, then top the salad with the avocado and chicken in marinate sauce.
11. Combine the extra virgin olive oil and lemon juice for the dressing, then drizzle over the salad
