Start your day right with these quick and easy low FODMAP chocolate protein pancakes. These low FODMAP pancakes are the best gluten free and low sugar pancakes you’ll ever have!

Low FODMAP Chocolate Protein Pancakes

Prep time: 10 minutes
Cook time: 15 minutes
Serves: 2

Ingredients:

  1. 1. 1 cup White Wings Gluten Free Plain Flour
  2. 2. 1 cup almond milk
  3. 3. 1 egg
  4. 4. 30g of FODMAP Friendly Protein Powder
  5. 5. 1 tsp Vanilla extract
  6. 6. 1 tsp baking powder
  7. 7. Butter for cooking
  8. Topping Suggestions 
  9.  1. 30g blueberries
  10. 2. Maple syrup

Method:

  1. 1. In a medium sized bowl combine gluten-free flour, protein powder, baking powder and whisk until blended.
  2. 2. Break dark chocolate into small chunks and to the dry mix.
  3. 3. In a second bowl, mix together the egg, almond milk and vanilla extract.
  4. 4. Gradually add the wet mix into the dry ingredients and whisk to combine until the batter is smooth.
  5. 5. In a large sauce pan, add butter over a low-medium heat. Once the pan is hot, pour ¼ cup of the batter onto the pan and allow it to cook until the edges become firm and bubbles form on the top. Then flip the pancake and cook till golden brown.
  6. 6. Continue until all the batter is used.
  7. 7. Add toppings and serve warm!
