Cucumber Cups with Creamy Peanut Chicken – Low FODMAP Recipe Of The Week

This is the perfect low FODMAP dish to bring to your next party!

These Cucumber Cups with Creamy Peanut Chicken, featuring San J’s delicious FODMAP Friendly Certified sauces, will be a total crowd AND tummy pleaser.

This low FODMAP recipe has been adapted from the original recipe on the San J page.

 

Ingredients

  • 3 Seedless cucumbers
  • 8 ounces lactose-free cream cheese, at room temperature
  • 1½ cups Cooked chicken, cut into small pieces
  • 3 tablespoons San-J Gluten Free Thai Peanut Sauce
  • 2 tablespoons Mayonnaise
  • 2 teaspoons San-J Gluten Free Tamari Soy Sauce
  • Chilli flakes to taste, optional
  • 1/3 cup Dry roasted, salted peanuts, finely chopped
  • For garnish Fresh cilantro leaves

Instructions

Servings: Makes about 30

  1. 1. Cut the cucumbers into 1-inch pieces, discarding the ends. Using a small spoon or melon baller, scoop out the center of the cucumber. Drain upside down on paper towels.
  2. 2. Combine the cream cheese, chicken, peanut sauce, mayonnaise, tamari, and chilli (if using) in a food processor and blend, scraping down the sides of the bowl as needed, until very smooth. Pipe the mixture into the prepared cucumber cups.
  3. 3. Garnish with chopped peanuts and cilantro leaves.
