Low FODMAP Miso Sesame Glazed Eggplant Chips

Add these crispy sesame coated eggplant fries to your day for a tasty snack!
These chips make for a great snack or even side for dinner. They’re easy to make and a great way to add more vegetables into your day!

Low FODMAP Miso Sesame Glazed Eggplant Chips

Prep time: 20 mins
Cook time: 25 mins
Serves:
4

Ingredients:

• 2 eggplants
• A handful of sesame seeds

Marinade:
• ¼ cup white miso
• 1 tbsp soy sauce
• 3 tbsp garlic infused olive oil
• Salt (a pinch)

Dipping sauce:
• Sesame Roasted Kewpie Mayo

Method:

  1. 1. Combine and mix the marinade ingredients in one bowl
    2. Cut the eggplant in half and then into 4 four quarter wedges
    3. Coat the eggplant with the marinade
    4. Sprinkle sesame seeds over the top
    5. Place in the air fryer on 180°C for 20-25 minutes, flipping the eggplants half way through
    6. Serve warm with sesame roasted kewpie mayo drizzled over the top.
