Low FODMAP Green Curry Recipe

A simple but flavoursome dinner option that the whole family will enjoy! 

Green curry typically has high FODMAP ingredients like garlic and onion. This recipe from Fodmapped For You recreates the delicious green curry taste that you all know and love, without the high FODMAP trigger ingredients.

Prep Time: 10 minutes

Cook Time: 20 minutes

Serves: 2

Ingredients: 

  • 200g (1 Pack) Fodmapped Green Curry Simmer Sauce
  • 350g Lean Beef, Chicken Or Pork, Cut Into Thin Strips
  • 1 Tbsp Vegetable Oil
  • 1/2 Cup (45g) Broccoli
  • 1/2 Carrot, Finely Sliced
  • 1/4 (50g) Red or Yellow Capsicum, Sliced
  • 6 (40g) Green Beans, Sliced

To Serve:

  • Basmati Rice
  • Lime Wedges
  • Coriander

Instructions:

  1. 1. In a heavy base fry pan or wok add the vegetable oil over a medium heat.
  2. 2. Brown meat strips for 3-4 minutes.
  3. 3. Reduce heat to low, add carrot and capsicum and saute for 2-3 minutes.
  4. 4. Add beans and broccoli, pour in 200g Fodmapped Green Curry Simmer Sauce and stir through, cooking for a further 12-15 minutes.

To Serve: 

  1. Serve with steamed Basmati rice in a deep bowl. Garnish with a lime wedge and chopped coriander.
