Low FODMAP Sweet Potato Brownies | FODMAP Friendly Recipe Of The Week

Who doesn’t love a brownie every now and then? This Low FODMAP Brownie recipe is the perfect contribution for your next share lunch at work (or to keep for yourself!)

Up your fibre intake at the same time as enjoying this delicious treat with the addition of Kfibre fibre supplement which has been certified FODMAP Friendly.

Serves: 8

Ingredients:

  • 400g sweet potato (raw)
  • 140g sugar
  • 100g low fodmap flour
  • 50g cocoa powder
  • 100g walnuts
  • 100g dark chocolate chips
  • 2 eggs
  • 100g butter
  • 1 tsp vanilla extract
  • 150ml lactose free milk
  • 4 tbs Kfibre

 

Method:

  1. Preheat oven to 190 degrees
  2. Line a brownie baking tray
  3. Peel and chop sweet potato, place in a bowl with a small amount of water and cook in the microwave (stirring regularly) until soft
  4. Combine all dry ingredients in a large mixing bowl
  5. Add wet ingredients and whisk until just combined
  6. Add mixture to lined tray and bake for 30 minutes
  7. Allow to cool slightly, slice into 8 portions and enjoy!
