Low FODMAP Salmon & Veggie Foil Packets

Ingredients: 

2 salmon fillets (~150 g each)
1 small zucchini, sliced
1 medium carrot, julienned
50g green beans, trimmed
2 tbsp olive oil
1 tsp dried dill or fresh parsley
Salt and pepper to taste
2 lemon slices

Method:

1. Preheat your oven to 180°C (350°F).
2. Tear off two large sheets of aluminium foil.
3. Place one salmon fillet in the centre of each foil sheet.
4. Divide the zucchini, carrots, and green beans between the two packets, arranging them around the salmon.
5. Drizzle olive oil over the salmon and veggies, then sprinkle with dill (or parsley), salt, and pepper. Top each fillet with a lemon slice.
6. Fold the foil over the salmon and veggies, sealing the edges tightly to create a packet.
7. Place the packets on a baking tray and bake for 20 minutes, or until the salmon flakes easily with a fork.
8. Carefully open the packets (watch for steam) and serve hot.
