Low FODMAP Chocolate Chip Snack Bites
Makes 20 balls
1 cup Uncle Toby’s Rolled Oats
½ cup butter (sunflower if possible, but any butter is ok)
1/2 cup Enjoy Life Foods Semi-Sweet Mini Chips are FODMAP Friendly certified chocolate
Optional add-ins: 1 tsp. cinnamon or 2 Tbsp chopped pumpkin seeds.
1. Place all but 3 tablespoons of the oats in the bowl of a small food processor. Pulse until you have a coarse flour.
2. Mix together the coarse oat flour, remaining whole oats, butter, and Enjoy Life Foods Mini Chips until well combined.
3. Scoop out into about 20 portions and roll into balls.
4. Place in the refrigerator in a resealable container and enjoy for up to one week!
