Low FODMAP Soba Noodle Stir Fry

Here’s a simple low FODMAP and nutritious stir fry packed with flavour for you to try!

Soba noodles are a low GI carbohydrate, making this a nicely balanced meal (ingredients can be doubled if you’re cooking for a family).

Low FODMAP Soba Noodle Stir Fry

Prep time:  15 minutes
Cook time: 20-25 minutes 

Serves:
2

Ingredients:

– Garlic infused olive oil
– 200g beef sliced
– 1 cup Bok Choy (roughly chopped)
– 1 cup Gai Ian / Chinese broccoli
– 2 carrots (grated)
– 1 small red capsicum
– 16g spring onion (green part only)
– Ginger (small piece, finely chopped)
– Coriander (chopped)
– 180g Soba Noodles (wheat or buckwheat)

Sauce

– 2 Tbsp. Soy sauce
– 2 Tbsp. Slightly Different Foods Sweet Chilli Sauce
– Pinch of sesame seeds

Method:

  1. 1. Fry beef slices in garlic infused olive oil
  2. 2. Once beef turns brown, add in Bok Choy, Chinese broccoli, carrot and capsicum into fry pan, and cook on medium-high for about 10-15 minutes.
  3. 3. Add in the greens of spring onion and ginger.
  4. 4. Cook Soba noodles according to packet instructions.
  5. 5. Mix sauce ingredients together, add to stir fry and top with chopped coriander to serve.
