Creamy scrambled eggs with baby spinach and feta make a quick and delicious low FODMAP breakfast that’s high in protein and packed with nutrients.

Low FODMAP Spinach & Feta Scrambled Eggs

Prep Time: 5 minutes
Cook Time: 5 minutes

Ingredients: 

  • 3 eggs
  • 1/4 cup lactose-free milk
  • 1/4 cup baby spinach, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp butter
  • Salt & pepper to taste

Method:

  1. In a bowl, whisk eggs with milk, salt, and pepper.
  2. Melt butter in a pan over medium heat and add spinach.
  3. Pour in the eggs and gently stir until just set.
  4. Sprinkle feta on top and cook for another 30 seconds.
  5. Serve warm and enjoy!
