Stacked Sweet Potato for brunch

Pear Tree & Co. combines sweet potato and their delicious granola to make this Stacked Sweet Potato for brunch! What a creative idea!

If you are looking for a low FODMAP homemade brunch idea, here’s what you need:

Serves: 1

Ingredients:

  • 1/2 medium sweet potato
  • 1 tbsp coconut yogurt or lactose-free yogurt
  • 1/4 cup blueberries
  • 1 tsp almond butter
  • 20g Pear Tree & Co. Maple & Cinnamon granola

 

Method:

  1. 1. Pre-heat the oven to 180 degrees.
  2. 2. Pierce sweet potato and place in the oven for 40 minutes or until soft inside.
  3. 3. Cut sweet potato open and load with coconut yogurt, blueberries, almond butter and granola.
