Stacked Sweet Potato for brunch

Serves: 1
Ingredients:
- 1/2 medium sweet potato
- 1 tbsp coconut yogurt or lactose-free yogurt
- 1/4 cup blueberries
- 1 tsp almond butter
- 20g Pear Tree & Co. Maple & Cinnamon granola
Method:
- 1. Pre-heat the oven to 180 degrees.
- 2. Pierce sweet potato and place in the oven for 40 minutes or until soft inside.
- 3. Cut sweet potato open and load with coconut yogurt, blueberries, almond butter and granola.
