Low FODMAP Sweet Potato Toast

A sweet gut-friendly alternative for your morning toast: sweet potato toast! This sweet potato toast has the perfect crisp of toasted bread and it perfectly complements almost anything you layer it with. You could even try some peanut butter or smashed avocado!

Low FODMAP Sweet Potato Toast

Ingredients:

• 2 Thin slices of Sweet potato (approx 75g each)
• 4-5 Spinach leaves
• 2 eggs
• 2 tbsp of lactose free yogurt
• 3 cherry Tomatoes
• 1 baby Cucumber

Method:

  1. 1. Thinly slice your sweet potato and brush it will olive oil. Add two of the slices to the toaster and let it toast for 5 minutes.
    2. While the sweet potato is the toaster, add two eggs to a bowl, a pinch of salt, pepper and 2 tbsp of milk and beat the eggs until combined.
    3. In a heated pan, add a small cube of butter and let it melt. Then add the eggs and scramble them with a spatula. Turn off the heat before the eggs brown in colour.
    4. Remove the toasted sweet potato and top one of the slices with scrambled eggs and spinach leaves.
    5. Layer the other slice with dairy free yogurt, chopped cherry tomatoes and thin slices of cucumber.
    6. Enjoy!
