Low FODMAP Garden Vegetable Pasta

Garden Vegetable Pasta
Prep time: 10 minutes
Cook time: 20 minutes
Serves: 4
Ingredients:
– 1 package Orgran Garden Veggie Penne 300g
– 500g low FODMAP tomato passata sauce (without onion or garlic)
– 1 green zucchini, sliced
– 1 eggplant, roughly chopped
– 4 squash, sliced
– 1 tbsp olive oil
– Salt and Pepper to taste
– Fresh basil and parmesan, to serve
Method:
- 1. Bring a pot of salted water to the boil and cook pasta per instructions. Drain and set aside.
- 2. In a large saucepan, fry zucchini, eggplant, and squash with the olive oil, until soft and cooked through. Add the passata sauce and stir until a light simmer. Add the salt and pepper and mix for 2-3 minutes.
- 3. Stir through the cooked pasta and top with fresh basil and parmesan to serve.
