• ¾ cup quinoa, rinsed
• 1 ½ tbsp. lemon juice
• 1 tsp olive oil
• 1/3 cup flat leaf parsley, chopped
• 1 small Lebanese cucumber, deseeded and diced
1. Place quinoa in a saucepan with 1 ½ cups of cold water over high heat. Cover, bring to the boil. Reduce heat to low and simmer for 10-12 minutes or until water has been absorbed. Drain, rinse and place in a large bowl.
2. Place lemon juice and oil in a screw-top jar. Season with salt and pepper and secure the lid. Shake to combine. Add the parsley, cucumber and dressing to the salad. Toss to combine. Serves 4.
