FODMAP Friendly Winter Warming Vegetable Medley Risotto
The delicious, hearty comfort of risotto is tempting on a cold night. Especially because it’s so cold here in Melbourne!
There’s nothing like the nourishing comfort of a low FODMAP winter-warming risotto after a long, cold day.
Eat it while snuggled up with a blanket opposite the telly, heat then eat for lunch the day after, or enjoy as a snack any time of day.
Simply delicious and ever-so-simple to make. Now let’s get cooking!
Serves 4
Ingredients:
- 1L FODMAPPED Slow Cooked Chicken Stock
- 1 ½ cups (320g) Arborio rice
- 25g butter
- 2 tbsp Cobram Estate Garlic Infused Extra Virgin Olive Oil
- 1 ½ cup (375ml) water
- 1 large zucchini
- 125g oyster mushroom
- 400g kent pumpkin
- 1 cup spinach
- ½ cup halved cherry tomatoes
- 30g (about 8) olives
- ¼ cup parmesan cheese
- ¼ wedge lemon and thyme to garnish
- 300g boiled and shredded chicken (optional)
Steps:
Vegetable Preparation
- Preheat oven to 200C.
- Cut zucchini and kent pumpkin into 1-2cm pieces.
- Place kent pumpkin pieces onto lined baking tray and drizzle with garlic infused oil, bake for 20 minutes.
- Add zucchini pieces with kent pumpkin and bake for another 10 minutes.
Stock Preparation
- Pour water and FODMAPPED Slow Cooked Chicken Stock in saucepan, and bring to boil. Once boiling, reduce to simmer and cover.
Risotto Preparation
- In another large saucepan, melt butter and 1 tbsp oil.
- Add mushroom, spinach and cherry tomatoes to pan and cook for 5 minutes.
- Add rice to pan.
- Add 1 cup of stock and stir until rice and vegetables have completely absorbed the stock.
- Once absorbed, continue to add stock 1 cup at a time.
- Add baked zucchini and kent pumpkin to risotto with last cup of stock.
- Stir in olives and parmesan cheese.
- Garnish with lemon and thyme and serve.
