FODMAP Friendly Granola Breakfast Cookies

 

There are many ways to enjoy granola – with your favourite nut milk, lactose-free yoghurt or on top of an acai bowl! But have you ever thought of baking it to create delicious granola-filled cookies?

This week’s low FODMAP recipe of the week is using Nourished By Carms FODMAP Friendly Certified Original Granola!

 

Serves: 8 (makes 8 large cookies or 16 small ones)

Prep Time: 20 Mins

Cook Time: 15-20 Minutes

Ingredients:

Instructions:

  1. 1. Preheat oven to 150 degrees and line a large tray with baking paper.
  2. 2. Blitz granola and buckwheat flour in food processor until the mixture resembles crumbs. Transfer to a bowl and add the rice puffs.
  3. 3. Combine Nuttelex, rice malt syrup, salt and vanilla in a saucepan and stir to combine over low heat. Once melted and combined, allow to gently simmer for a couple of minutes.
  4. 4. Combine wet ingredients with granola mix.
  5. 5. Using wet hands, roll heaped tablespoons of granola into balls and place on tray and gently flatten.
  6. 6. Bake for approx 15-20 minutes until golden brown. Allow to cool before serving.
