Low FODMAP Garden Vegetable Pasta

Trying to get more vegetables into your diet? Check out this recipe using the newly certified Orgran Garden Veggie pasta. On top of that, this recipe is packed full of hearty vegetables too!

Garden Vegetable Pasta

Prep time: 10 minutes
Cook time: 20 minutes 

Serves:
4

Ingredients:

– 1 package Orgran Garden Veggie Penne 300g
– 500g low FODMAP tomato passata sauce (without onion or garlic)
– 1 green zucchini, sliced
– 1 eggplant, roughly chopped
– 4 squash, sliced
– 1 tbsp olive oil
– Salt and Pepper to taste
– Fresh basil and parmesan, to serve

Method:

  1. 1. Bring a pot of salted water to the boil and cook pasta per instructions. Drain and set aside.
  2. 2. In a large saucepan, fry zucchini, eggplant, and squash with the olive oil, until soft and cooked through. Add the passata sauce and stir until a light simmer. Add the salt and pepper and mix for 2-3 minutes.
  3. 3. Stir through the cooked pasta and top with fresh basil and parmesan to serve.
