Low FODMAP Griddled Vegetable Burger

– 2 gluten-free wraps or large lettuce leaves
– 1/2 cucumber, diced
– 1/2 cup cherry tomatoes, halved
– 15 olives, pitted and sliced
– 40g crumbled feta cheese (omit for a dairy-free or vegan option)
– 2 tablespoons extra-virgin olive oil
– 1 tablespoon red wine vinegar
– 1 teaspoon dried oregano
– Salt and pepper, to taste
– Beef, Chicken or Lamb (omit for a dairy-free or vegan option)


  1. 1. In a medium bowl, combine the cucumber, cherry tomatoes, olives, feta cheese (if desired), extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper. Toss well to combine.2. Lay out the gluten-free wraps or lettuce leaves on a clean surface.

    3. Spoon the Greek salad mixture onto the centre of each wrap or lettuce leaf, top with your meat of choice (if desired).

    4. Fold in the sides of the wrap or lettuce leaf, then roll it up tightly, similar to a burrito, ensuring the filling is secure.

    5. Slice the wrap in half if desired, and serve immediately.
