‘Carne asada’ is for Mexicans what a BBQ is for Aussies…only this time replace the snag with tender, thin-cut beef & the bread with one of our FODMAP friendly corn tortillas. In Mexico, the marinade for preparing the grilled beef varies from family to family, each with their own twist. This is our family recipe, adapted to be FODMAP friendly so that every amigo can enjoy!

Ingredients:
220g La Tortilleria Corn Tortillas (8 pack) (Buy Here)
800g Thin-Cut Beef Steak
1 tsp Dried Thyme
1 tsp Dried Oregano
1 ½ Cups Fresh Coriander
1 Jalapeño
1 tsp garlic infused olive oil
Recipe:
- Prepare the marinade by combining the oregano, thyme ½ cup of coriander, garlic oil, jalapeño, lime juice, grapefruit juice & vegetable oil in a blender.
- Place the beef in a bowl & cover with the marinade, ensuring it is well coated. Place in the fridge for a minimum of two hours (or ideally overnight).
- Preheat your BBQ (or hot pan) to a high heat then cook the beef to your liking. Take the beef off the heat & let rest for 2 minutes. Once rested, dice into small pieces.
- At the same time, heat your tortillas on a very hot dry frying pan until soft & floppy, about 10 seconds either side. Wrap them in a thick cloth or aluminium foil as you go to keep them warm.
- To serve, place cooked beef on a tortilla & garnish with the rest of the coriander & finely chopped onion.
