
Cranberry Blondies

This week’s low FODMAP recipe of the week is Cranberry Blondies created by the Lo-Fo Pantry! Not only are they mouth-watering but also easy to make! Most of the ingredients are staples in your pantry. Simply get some Lo-Fo Pantry Plain Flour, dried cranberries and white chocolate chips, and… get started on making these low FODMAP goodies!
What you’ll need (to make 16 serves of blondies):
- 115g butter melted
- 1 ¼ cups Lo-Fo PantryPlain Flour
- 1 teaspoon baking powder
- ¾ cup brown sugar
- 2 teaspoons vanilla extract
- 1 large egg
- 115g white chocolate chips
- ⅓ cup dried cranberries
Process
- 1. Preheat the oven to 160oC and line a square (8x8inch) tray with baking paper.
- 2. Melt the butter and then add it to the brown sugar. Allow to cool for 2 mins.
- 3. Stir the mixture then add in the vanilla extra and egg, stirring to combine.
- 4. Sift in the flour and baking powder and stir to form a soft dough.
- 5. Quickly stir in the white chocolate and cranberries.
- 6. Pour Mixture into the prepared baking tray and use an offset pallet knife or spatula to smooth the top.
- 7. Bake in the oven for 25-30 mins or until golden brown. Remove from the oven and allow to cool in the tray for 15 mins, before removing and cutting into small squares.
- 8. Enjoy this delicious combination of flavors!
