Who said chicken and rice has to boring? Try this delicious, perfectly seasoned low FODMAP recipe!
Low FODMAP Lemon Chicken and Rice

Serves: 4-6
Ingredients:
- 1 ½ pounds / 600g boneless, skinless chicken thighs
- 2 tbsp garlic infused extra virgin olive oil
- 1 cup long-grain white rice
- 2 cups Low FODMAP chicken or vegetable broth
- 3 tbsp lemon juice
- 2 tbsp (low FODMAP) italian seasoning
- Sprinkle of Salt and pepper
Method:
- 1. Season chicken thighs lightly with salt and pepper
- 2. Heat a large pan on high heat with garlic infused extra virgin olive oil for 2 minutes. Once hot enough, bring down to medium heat and sear chicken thighs for 2 minutes each side until golden brown then remove chicken from the pan and place in a bowl.
- 3. Add uncooked rice, chicken broth, lemon juice and Italian seasoning to the pan.
- 4. Bring the pan with ingredients to a boil over medium-high heat, once boiling add the chicken and reduce to a medium-low heat and cook for 15 minutes or until the rice has absorbed the liquid and chicken is cooked.
- 5. Once cooked, remove from heat and add salt and pepper to your liking.
