Introducing the masterminds behind La Tortilleria
Co-founders Diana Hull and Gerardo Lopez wanted to share real Mexican food with the people of Australia, and corn tortillas are the heart and soul of real Mexican! They adopted a millennia old process, Nixtamalization, used to make a more nutritious and tasty tortilla. Mexican food is festive and fun, and tortillas are at the centre of Mexican gastronomy and we, at La Tortilleria, want to create the best tortillas, inspired by those ones in the villages of México.
How did La Tortilleria begin?
After studying in Mexico, Diana met Mexican ex-pat, Gerardo, back in Melbourne. These two foodies hit it off based on their love of tacos and real food… Before too long the idea of La Tortilleria and a great business partnership was born. At the time, the only tortillas widely available in Australia were either imported frozen from the US, or made here from an imported ‘instant’ tortilla flour. Being passionate about sustainability and low food miles, Diana and Gerardo – La Tortilleria founders – knew there was a gap in the market, and they could fill it by creating a local 100% Australian alternative that included cooking and stone grinding their own corn to make the tortillas from scratch. In March 2013 La Tortilleria was born in a quiet backstreet of an industrial area in Kensington.
What is the inspiration behind the La Tortilleria products?
La Tortilleria wanted to honour Mexican tradition in the making of their products, and celebrate the nutritional attributes of Nixtamalized corn. La Tortilleria believe food should be simple and real, and they wanted La Tortilleria tortillas and tortilla chips to reflect that.

What makes La Tortilleria products stand out?
La Tortilleria products are now FODMAP Friendly certified! Their tortillas are made locally from Australian corn and sea salt, that’s it. They nixtamalize the wholegrain corn to make it more nutritious which takes time, but is worth it. You can taste, see and smell the difference using wholegrain, nixtamalized corn makes, and your insides are better off too! La Tortilleria are focusing on keeping it simple at the moment with their tortillas and tortilla chips growing in popularity at a rapid pace!
