Low FODMAP Strawberry Walnut Crumble

FODMAP Friendly are all about variety and delicious low FODMAP food! What about this low FODMAP crumble you could have at breakfast or for dessert?  Bonus, it contains a FODMAP Friendly prebiotic!

Low FODMAP Strawberry Walnut Crumble

Serves 4

Ingredients:

1/4 cup Unripe Banana, mashed
3/4 cup Uncle Toby’s Rolled Oats
2 Tbsp of happiGut™ or for those in Australia Kfibre
1 tsp Cinnamon
1 cup Walnuts, roughly chopped
200g Fresh Strawberries, sliced
1 tsp Vanilla Extract
1/2 tsp Avocado Oil (spray oil)

Method:

1. Preheat the oven to 375°F (190°C). Grease an 8″ x 8″ (20x20cm) baking dish with the avocado oil
2. In a mixing bowl combine the bananas, oats, cinnamon, happiGut™ and press together to form a crumble.
3. Stir in walnuts, mix to combine.
4. Mix together vanilla and strawberries and transfer to prepared baking dish.
5. Bake for 20 to 25 minutes, or until the strawberries are bubbling up the sides, and the crumble topping is slightly brown.
6. Divide into 4 dishes and enjoy with a scoop of FODMAP Friendly Certified Liddell’s Lactose Free Yoghurt, Green Valley Creamery Yoghurt or Cocofrio Frozen Dessert.
