Low FODMAP Berry Popsicle
Perfect for a hot Summer’s day, or a late night sweet treat!
Serves: 6
Ingredients:
- 1 Cup Blueberries
- 3/4 Cup Strawberries (+1/4 Cup Diced Strawberries)
- 2 Cups Liddells Lactose Free Plain Yoghurt OR Green Valley Creamery Lactose-Free Low Fat Plain Yogurt
- 1 Tbsp Rice Malt Syrup

Steps:
- 1. In a blender, add 3/4 cup blueberries, 3/4 cup strawberries, FODMAP Friendly yoghurt of choice and rice malt syrup, and blend until smooth.
- 2. Pour mixture into a large bowl and sprinkle remaining blueberries and diced strawberries, fold mixture until pieces of fruit are spread evenly in the mixture.
- 3. Pour mixture with fruit pieces into popsicle mould and place in freezer.
- 4. Popsicles will be ready to eat once the mixture has frozen (approximately 6 hours or longer) – Enjoy!
