Low FODMAP Chicken Pasta Soup

A warm and cosy winter night meal, this low FODMAP chicken pasta soup will be what you crave every night during winter. This chicken pasta soup is highly nutritious packed with lots of veggies and protein, keeping you full throughout the day for lunch or at night for dinner. This is a fantastic meal to serve for dinner when you have guests over and want to warm up the house in winter.

Low FODMAP Chicken Pasta Soup

Prep Time: 15 minutes 
Cook time: 15 minutes
Serves: 6

Ingredients:

  • 1 1/2 tbs canola oil
  • 1 1/2 cups carrots (sliced thin)
  • 1 cup leeks (chopped green part only)
  • 1/2 cup celery (sliced thin)
  • 2 cups water
  • 4 cups low FODMAP stock (no onion or garlic)  San Elk Vegetable stock (for this recipe, use 4 tsp to mix into into 4 cups of hot water)
  • 2 cups quinoa pasta
  • 1 tsp dried thyme
  • 285g pre-cooked chicken breasts (shredded with fork)
  • 1/4 tsp pepper
  • 1/4 tsp salt

Method:

  1. 1. Heat oil in a large pot over medium heat, adding carrots, celery and leeks, and cook for 5 minutes stirring occasionally.
  2. 2. While vegetables are cooking, combine water and chicken stock in a microwave safe bowl and microwave for 5 minutes.
  3. 3. Add the stock to the vegetable pot and bring to boil.
    4. Lower the heat to medium and add pasta and thyme. Cook until pasta is near done (6-9 minutes)
    5. Once pasta is almost cooked add chicken, salt, pepper, and cook for an additional 2 minutes.
  4. 5. Serve and enjoy!
