Indulge in the festive flavours of chocolate and peppermint with these delightful Low FODMAP Chocolate Peppermint Truffles. Made with dark chocolate, lactose-free cream, and a hint of peppermint extract, these truffles are a perfect treat for the holiday season. The optional coating of crushed candy cane adds a festive touch, making them a delightful addition to any holiday gathering!

Low FODMAP Chocolate Peppermint Truffles

Prep time: 10 minutes (melting and mixing)
Cook time: 15 minutes
Serves:
Approximately 20 truffles

Ingredients:

– 200g dark chocolate (70% cocoa or higher), finely chopped
– 1/2 cup lactose-free heavy cream
– 1/2 teaspoon peppermint extract
– 2 tablespoons powdered sugar
– Crushed candy cane for rolling (optional)

Method:

1. Prepare the Chocolate Mixture: In a heatproof bowl, place the finely chopped dark chocolate.

2. Heat the Cream: In a small saucepan, heat the lactose-free heavy cream over medium heat until it just starts to simmer. Be careful not to let it boil.

3. Combine Chocolate and Cream: Pour the hot cream over the chopped chocolate. Let it sit for a minute to melt the chocolate, then stir until smooth and well combined.

4. Add Peppermint Extract: Stir in the peppermint extract until the mixture is infused with a delightful peppermint flavour.

5. Chill the Mixture: Cover the bowl and refrigerate the mixture for at least 2 hours or until it’s firm enough to handle.

6. Shape the Truffles: Once the mixture is firm, use a teaspoon to scoop out portions and roll them into small balls. Place the balls on a parchment-lined tray.

7. Dust with Powdered Sugar (Optional): If desired, dust the truffles with a light coating of sifted powdered sugar for a decorative touch.

8. Optional Candy Cane Coating: Roll each truffle in crushed candy cane for a festive and pepperminty finish.
NOTE: When buying candy canes look out for high FODMAP ingredients such as high fructose corn syrup.

9. Chill Again: Return the truffles to the refrigerator for about 30 minutes to set.
