Fruit Curry Samosa Recipe By Slightly Different Foods

Calling for curry lovers! Ever wondered how you can use your Curry Sauce other than serving with  it rice or naan?

Try curry samosas!

Crispy and versatile curry samosas can be a tasty starter, a side dish or a great buffet plate for your next party!

This recipe uses the new FODMAP Friendly Certified Slightly Different Fruity Curry Sauce. It is a fruity tikka masala style sauce, extremely versatile and great for anyone seeking an authentic curry taste.

Serves: 4

Ingredients

  • 280g Gluten free puff pastry (2 sheets)
  • 125g Slightly Different Fruity Curry Sauce
  • 15g Petit pois (baby sweet peas)
  • 20g Diced courgettes (zucchini)
  • 20g Diced carrot
  • 20g Diced potato
  • 1 Tbsp Garlic infused oil (to baste the samosas)
  • Almond milk, or other low FODMAP alternatives (to seal the samosas)

Method

  1. 1. Chop courgette, carrot & potato into small cubes.
  2. 2. Boil all four vegetables until softened and drain.
  3. 3. Mix the vegetable with Slightly Different Fruity Curry Sauce.
  4. 4. Roll out the puff pastry sheet and cut into 2/4 sections, (pending size of your choice. We cut 4).
  5. 5. Divide the mixture evenly to one side of the pastry square leaving an edge around the pastry to seal samosa.
  6. 6. Use the almond milk to seal edges.
  7. 7. Fold the empty pasty side on top of the filled mixture side.
  8. 8. Seal the sides pressing with fingers.
  9. 9. Baste the samosa with the garlic infused oil to prevent them from sticking and place on a baking tray.
  10. 10. Baste top with almond milk if required.
  11. 11. Bake in the oven until golden brown and cooked through.

 

They taste amazing hot or cold! Enjoy!
