Lo-Fo Pantry Christmas Lemon Shortbread | FODMAP Friendly Recipe Of The Week

It’s beginning to look (and smell) a lot like Christmas… or it will be once you bake this delicious low FODMAP shortbread – recipe brought to you by Lo-Fo Pantry.
These mouthwatering cookies will definitely put you in the Christmas spirit, plus they’re low FODMAP, so you can enjoy them without any fear of tummy upsets during the festive season.
Serves: 20
Ingredients:
- 1 3/4 cups Lofo all purpose / plain flour
- 3/4 cup rice flour
- 250g butter at room temperature
- 1/2 cup raw sugar
- Zest of 3 lemons
Method:
- Place the flours, butter, sugar, lemon zest and salt in an electric mixer and beat until well combined
- Turn mixture out onto a work surface and lightly knead together until you have a soft dough
- Wrap in plastic and refrigerate for half an hour to rest
- Preheat oven to 180 degrees Celsius and line two baking trays with parchment paper
- Lightly flour your bensh and roll out the dough until it is about 5mm thick, cut into shapes and transfer to baking trays
- Bake for about 10 minutes or until the biscuits are lightly golden
- Sprinkle cookies with caster sugar as soon as they come out of the oven and then let them cool on a wire rack
