We’ve even done our best to keep this as simple as possible so you can have dinner on the table ready for the troops in no time!
Serves 8
Ingredients:
- 500g lean mince
- 4 cups diced tomatoes
- 2 tablespoons garlic infused olive oil
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 tablespoon dried parsley
- 1/2 tablespoon chilli flakes
- 1 diced carrot
- 1 cup diced eggplant
Method:
- Heat garlic infused oil in a pan and add mince (broken up)
- Add all spices
- Cook until mince is browned
- Add carrot and eggplant and cook until softened
- Add tomatoes and stir through
- Simmer until desired amount of liquid is left
Serve with your selection of low FODMAP pasta plus a side salad and enjoy!
