Low FODMAP Prawn Rice Paper Roll | FODMAP Friendly Recipe Of The Week

Rice paper rolls are the perfect way to celebrate the start of Spring! Full of fresh ingredients, and easy to make and take to your next picnic, party or for lunch.

Recreate this delicious low FODMAP rice paper recipe using your favourite protein and vegetables. Serve with FODMAP Friendly Certified Gluten Free Hoisin Sauce from San-J.

 

Serves: Makes 12 Rolls (1 serve 4 rolls)

 

Ingredients: 

  • 100 g vermicelli rice noodle
  • 50 g lettuce (shredded)
  • 2 carrots (shredded)
  • 1/2 red capsicum (thinly sliced)
  • 200g prawns (boiled)
  • 1 handful of Vietnamese mint
  • 1 handful coriander leaves
  • 1 small avocado (thinly sliced)
  • 12 large rice paper sheets
  • 4 tbsp San-J Gluten Free Hoisin Sauce

 

Method: 

1. Cook the rice noodles as per the pack instructions. Once cooked, drain and leave to cool.

2. In a wide deep bowl, fill with warm to hot water. Dip one sheet of rice paper into warm water and carefully lay onto a flat plate and allow to soften for 30 seconds.

3. About 3cm above the bottom edge of the softened rice paper sheet, spread a horizontal layer of shredded lettuce.

4. Add a pinch worth of shredded carrot, coriander and two mint leaves on top of the lettuce on the rice paper.

5. Spread a light layer of vermicelli, three cooked prawns, one slice of capsicum and avocado, ensuring the pile is relatively neat for rolling.

6. Fold over the left and right sides of the rice paper towards the middle, these will close off the ends of the roll.

7. Fold the bottom edge over the pile of rice paper filling and continue to roll upwards ensuring that the filling is tightly wrapped.

8. Serve with delicious San-J Gluten Free Hoisin Sauce.
