Low FODMAP Seafood Paella Recipe
Paella is a delicious Spanish dish using rice, a low FODMAP grain! Paella can be easily customised to include low FODMAP ingredients and flavours. It can also be a great dish to boost your vegetable intake!

Serves: 4
Ingredients:
- 200g Calamari, Sliced Into Rings
- 250g Prawn
- 3 x Medium Tomatoes, Diced
- 2 x Red Capsicums, Sliced
- 1 Cup Green Beans, cut into 1-2cm long pieces
- 2 Cups of Spinach
- 250g Uncooked Bomba or Short Grain Rice
- 500mL of Fodmapped For You Chicken Stock
- 2 Tbsp Cobram Estate Garlic Infused Olive Oil
- 1 Tsp Paprika
- 1/2 Tsp Cumin
- 1/2 Tsp Turmeric
To garnish:
- 1/2 Cup Parsley, Chopped
- 1/2 Lemon, Wedges
- Salt & Pepper To Taste
Instructions:
1. Heat 1 tbsp of garlic infused olive oil in a pan. Add prawn and cook for 5 minutes. Add calamari to pan and cook for another 2 minutes then set seafood aside.
2. In a deep, wide pan, heat 1 tbsp of garlic infused olive oil. Add tomatoes, capsicums & green bean and spices into pan and cook for 2 minutes.
3. Add chicken stock and rice into pan and let mixture boil at a high heat. Reduce the heat, cover with a lid and allow the mixture to simmer until rice is soft and has absorbed most of the stock (about 15-20 minutes).
4. Once the rice is soft, add cooked seafood and spinach and stir through until spinach has softened and mixed in well.
5. Season with salt and pepper. Garnish with parsley and lemon. Enjoy!
