Low FODMAP Spicy Mexican Burrito Bowls using Bay’s Kitchen Spicy Mexican stir-in sauce

There is something wonderful about pairing colourful vegetables with meat and spreading them as a burrito bowl. Bay’s Kitchen have enabled low FODMAPPERs to enjoy the wonders and comfort of Mexican foods with their new Spicy Mexican stir-in sauce.

These spicy Mexican burrito bowls are full of flavour and a plethora of vegetables. They are the ultimate low FODMAP comfort food – combining warming flavours with the convenience of minimal prep time.

In typical burrito bowls, you’ll often see garlic and onions cooked in with the meat and high FODMAP beans such as kidney beans or chickpeas as one of the components. We’ve made this recipe completely FODMAP Friendly by replacing the beans with another source of protein through the lean beef. The flavour that is subtracted with the absence of garlic and onions is added tenfold with the addition of the Spicy Mexican stir-in sauce. Also, the spice is added in amounts that will not cause digestive upset.

Low FODMAP Spicy Mexican Burrito Bowls

Serves: 4

Prep time: 10-15 minutes

Cook time: 20-25 mins

Ingredients:

  • 2 cups brown rice
  • 3 cups water
  • 1 cup spinach
  • 1 cup diced zucchini
  • 1 cup capsicum
  • 1 medium carrot, shredded
  • ½ cup sliced cherry tomatoes
  • 500g of lean beef mince
  • ½ lime
  • ½ a jar of Bay’s Kitchen Spicy Mexican Stir-in Sauce

If you can’t source the Bay’s Kitchen Spicy Mexican sauce, add a can of crushed tomatoes with some paprika, cumin, salt and pepper.

Method:

1. Boil the brown rice according to the package instructions.

2. Cut the tomatoes, capsicum and zucchini into squares. Season with salt, pepper and a squeeze of lemon juice. Set aside.

3. Drizzle olive oil in a saucepan and cook the beef mince. Add the shredded carrot and ½ a jar of the Bay’s Kitchen Spicy Mexican stir-in sauce.

4. Lay the brown rice and spinach as the ‘base’ of the burrito bowl. Top with the spicy beef & carrot mix and add the fresh vegetables.

5. Top your burrito bowl with a squeeze of fresh lemon juice.

This meal is the perfect Friday night ‘home takeaway’ meal, and also great when you are low on time but would like to enjoy a low FODMAP, nutritious meal packed with vegetables and lean protein.
