Low FODMAP Maple Glazed Salmon

Ingredients:

– 4 salmon fillets (approximately 150 grams each)
– 2 tablespoons maple syrup
– 1 tablespoon low FODMAP soy sauce or tamari
– 1 tablespoon Dijon mustard
– 1 tablespoon lemon juice
– 1 teaspoon grated ginger
– 1/2 teaspoon ground cinnamon
– Salt and pepper, to taste
– Fresh parsley, for garnish

Method:

1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

2. In a small bowl, whisk together the maple syrup, low FODMAP soy sauce or tamari, Dijon mustard, lemon juice, grated ginger, cinnamon, salt, and pepper.

3. Place the salmon fillets on the prepared baking sheet, skin-side down. Brush the maple glaze mixture generously over the salmon, coating it evenly.

4. Bake the salmon in the preheated oven for about 12-15 minutes, or until it flakes easily with a fork and reaches your desired level of doneness.

5. Remove the salmon from the oven and let it rest for a few minutes.

6. Garnish with fresh parsley and serve the Festive Maple Glazed Salmon alongside your favourite low FODMAP side dishes, such as roasted vegetables or a quinoa salad.
