Low FODMAP Strawberry Sorbet

Freeze time: 4 hours
Serves: 4
Ingredients:
- 1 cup fresh or frozen strawberries
- 1/2 cup granulated sugar
- 1 tsp lemon juice
- 1 tsp cornstarch
- 1/2 cup water
Method:
- 1. In a saucepan, mix together the strawberries, sugar, lemon juice, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
- 2. Reduce heat and let the mixture simmer for 2-3 minutes, or until the strawberries are soft and the mixture is thickened.
- 3. Remove the saucepan from heat and let the mixture cool to room temperature.
- 4. Once cooled, transfer the micture into a blender and blend until smooth.
- 5. Pour the mixture into a shallow dish and freeze for at least 4 hours, or until the sorbet is firm.
- 5. Scoop the sorbet into serving dishes and serve immediately, garnished with fresh strawberries or mint if desired.
