Low FODMAP Strawberry Sorbet

Ingredients:

  • 1 cup fresh or frozen strawberries
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1/2 cup water

Method:

  1. 1. In a saucepan, mix together the strawberries, sugar, lemon juice, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  2. 2. Reduce heat and let the mixture simmer for 2-3 minutes, or until the strawberries are soft and the mixture is thickened.
  3. 3. Remove the saucepan from heat and let the mixture cool to room temperature.
  4. 4. Once cooled, transfer the micture into a blender and blend until smooth.
  5. 5. Pour the mixture into a shallow dish and freeze for at least 4 hours, or until the sorbet is firm.
  6. 5. Scoop the sorbet into serving dishes and serve immediately, garnished with fresh strawberries or mint if desired.
