Low FODMAP One-Pot Tomato and Chicken Pasta

Ingredients:

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp FreeFOD Onion Replacer
  • 2 tsp FreeFOD Garlic Replacer
  • 2 cups cherry tomatoes, halved
  • 1 cup chicken broth
  • 1 cup gluten-free pasta
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Method:

  1. 1. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until golden brown, about 5-7 minutes.
  2. 2. Add the onion and garlic replacers to the skillet and cook for another minute.
  3. 3. Add the cherry tomatoes, chicken broth, gluten-free pasta, salt, and pepper to the skillet. Stir to combine and bring the mixture to a boil.
  4. Reduce heat to low, cover the skillet, and let the pasta cook for 10-12 minutes, or until the pasta is tender and the liquid has been absorbed.
  5. Serve the pasta hot, garnished with fresh basil leaves if desired.
