Low FODMAP eggplant and zucchini pasta

Don’t we all love a warming bowl of pasta with our favourite Netflix show at the end of the day?

A low FODMAP diet does not mean you do not get to enjoy pasta. This recipe is low FODMAP, vegetarian and absolutely delicious. Plus, it will take you no more than 20 minutes! The ingredients are simple and readily available at any supermarket.

Low FODMAP Eggplant and Zucchini Pasta

Prep time: 5 minutes
Cook time: 15 minutes
Serves: 3

Ingredients:
• ½ cup diced zucchini
• ½ cup diced carrot
• ½ cup diced eggplant
• Cheddar cheese (to garnish)
• ¾ cup gluten free pasta
• ¼ cup cherry tomatoes
• Olive oil
• ½ tsp black pepper
• ½ tsp paprika
• ½ tsp oregano
• Salt to taste
• Arugula (optional)

Method:.

  • Add your pasta to a pot filled with boiling water and let it boil for 7 minutes until al dente (or follow specific cooking instructions on the packet). Add a pinch of salt.
  • While the pasta is cooking, chop the carrot, zucchini, cherry tomatoes, and eggplant into small cubes and sauté in a pan with olive oil for 5-7 mins.
  • Add the black pepper, paprika and salt.
  • Drain the pasta and add to the sautéed vegetables. Stir well to combine.
  • Garnish with some grated cheddar cheese, oregano and some fresh basil leaves if you like.
  • Serve the pasta with some arugula on the side and enjoy!
