Aloo Palak (Potato Spinach) – Low FODMAP Recipe Of The Week

Have you tried Aloo Palak before?  Aloo refers to potato and palak refers to spinach in Indian language. Aloo palak is a North Indian dish made by stir frying potatoes and spinach. With Mamaji’s Paprikaan Spinach sauce, you can easily make this delicious, aromatic and low FODMAP vegan dish!

Aloo Palak

Prep: 5 mins

Cook: 20 mins

Serves 4

 

Ingredients

  • 1 jar of Mamajis Paprikaan Spinach Sauce (375g/13oz)
  • 3 large white potatoes (600g/21oz), peeled and chopped into 1 inch cubes
  • 1 small handful fresh coriander, washed and roughly chopped
  • 1 medium green chilli (optional), finely diced
  • 1 tablespoon preferred cooking oil

Directions

  1. 1. In medium size saucepan, heat oil of choice
  2. 2. On med-high heat, stir fry potatoes for 3-4 minutes
  3. 3. Add contents of Mamaji’s Paprikaan Spinach jar and chili
  4. 4. Cover and cook for 15 mins (until tender), stirring regularly
  5. 5. Remove from heat, pour into serving dish and garnish with fresh coriander
  6. 6. Serve immediately with rice or low FODMAP bread
