Recipe of the Week: Chicken Pho (Vietnamese Rice Noodle Soup)

Chicken Pho
It’s pretty cold down under at the moment!
It’s the perfect time to whip up a Vietnamese inspired noodle soup dish!
Serves: 4
Ingredients:
- 1.5L FODMAPPED for you slow cooked chicken stock
- 500ml water
- 4cm of sliced ginger
- 3 star anise seeds
- 400g chicken breast
- 300g flat rice noodles
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 3 cups bean spouts
- ½ lemon (4 wedges)
- ½ cup mint
- ½ cup coriander
Steps:
Preparation for chicken
- Place chicken breast piece into a saucepan and cover with just enough water to cover.
- Bring to boil and simmer until chicken is completely cooked. Let cool and shred chicken.
Preparation of soup
- Pour FODMAPPED for you slow cooked chicken stock and water into a pot. Add sliced ginger, star anise, fish sauce and palm sugar. Bring to boil.
Preparation of rice noodles
- Place flat rice noodles into boiling water. After 5 minutes, drain noodles in colander.
Assembly
- In a deep bowl, place cooked rice noodles, cooked shredded chicken and 5 ladles of soup until covering. Finish with bean sprouts, mint, coriander and a wedge of lemon.
