FODMAP Friendly Food Of The Week – Zucchini!

Did you know that zucchinis, also known as courgettes, are one the most versatile FODMAP Friendly vegetables?
Packed with vitamins and minerals, this humble squash can be used in many different ways, to make any meal a FODMAP Friendly option!
Here are two easy ways to utilize zucchinis that you may not have tried:
1. Zucchini noodles, or ‘zoodles’ – made with spiralized or peeled zucchini strands. Simply wash and spiral/peel zucchini, then use in place of regular noodles or pasta.
2. Zucchini oats, or ‘zoats’ – made by grating zucchinis and stirring through oats before cooking, to increase volume and texture!
