We had a chat to the San-J folk to learn all about their rich Japanese-US heritage, and the inspiration behind their low FODMAP Asian cooking.

How did your company begin?

San-Jirushi was founded by the Sato family as a Tamari and miso company in 1804 in Mie, Japan. Current San-J President, Takashi Sato, is an eighth-generation member of the founding family. They began brewing the first Tamari from their Henrico, Virginia, facility in 1987, The Henrico plant was the first Tamari brewing facility built in the U.S., and product demand continues to grow.  In 2017 San-J began a major expansion to this facility which will be completed in 2018.  Thus continuing mastery of Japanese tamari brewing.


What is the inspiration behind your Certified products?

When San-J began importing product to the US in the 70’s, our core customer was the natural market consumer.  Consumer demand for Organic, GF, Kosher, Vegan and Non-GMO products rose and we added these certifications to our products to meet these demands and keep our consumers informed of our products attributes.


Why did you create your particular Certified products?

Original Tamari soy sauce is made without wheat. With the growth of the Gluten Free market we were embraced by the GF consumer as a trusted brand and we then converted our cooking sauces to a GF recipes so they could be enjoyed by all.  We listen to our customers and we have developed certified products to meet their requests.

What separates your products from others available on the market? Tamari’s history dates back to 7th century AD, when it was brought to Japan from China. It has been known since ancient times that cooked and fermented soybeans will produce a tasty, dark red paste, which the Japanese call miso. During the miso ripening process, a protein-rich liquid accumulates. This liquid was given the name tamari, or “that which accumulates.” Tamari is the origin of Japanese soy sauce.

Over 200 years of tamari brewing experience goes into every bottle of San-J Tamari.  Our Tamari is made using 100% soybeans.  The brewing process takes up to six months from bean to bottle, this process insures a complexity and depth of flavour that cannot be matched by other soy sauces.

San-J Tamari flavor doesn’t flash off under high temperatures. Because regular soy sauce is brewed with half wheat, it contains more aromatic flavor notes in the form of alcohols and esters, which flash off under high temperatures.

San-J Tamari has 37% more soy protein than regular soy sauce. During the fermentation process, soy protein is broken into complex amino acids that give San-J Tamari hundreds of distinct flavor components, creating its unique flavor enhancing abilities, and rich, complex taste.

San-J Tamari has a richer, milder taste than other soy sauces. More versatile than just a stir-fry seasoning, San-J Tamari is a great flavor enhancer, perfect as a salt substitute, marinade, and table condiment. It can be used in just about any recipe you can imagine, bringing out the best flavor of any ingredient.
