Quick & Easy Low FODMAP Butter Chicken Recipe

Makes 3-4 servings

Ingredients

  • 2 tablespoon oil (or garlic infused oil)
  • 1 ½ pounds, about 2-3 boneless, skinless chicken breasts, cut into ¾-inch chunks
  • 1 can 6 oz. tomato paste
  • 1 tablespoon garam masala
  • 1 tsp salt
  • 1 cup low FODMAP heavy cream or yogurt

Instructions

  1. Heat a large skillet or medium saucepan over medium-high heat. Add the oil and garam masala and let cook for 1-2 minutes, stirring so it doesn’t burn.
  2. Add the chicken, tomato paste, salt and heavy cream or yogurt. Cook at medium heat for 5-6 minutes, then simmer, covered, for 8-10 minutes stirring occasionally or until cooked though.
  3. Serve over Basmati rice or with gluten free naan bread.
