FODMAP Friendly Recipe of the Week: Eggplant Lasagna

Low FODMAP Eggplant Lasagna

Being on a low FODMAP diet, doesn’t mean you have to miss out on lasagna!

We’ve created this delicious recipe using eggplant as the layering sheets, to up your vegetable intake whilst keeping your tummy happy!

A delicious Winter warming recipe that the whole family will love.

Let’s get cooking!

Serves: 10

Ingredients:

Instructions For Vegetables:

  1. Preheat oven at 180 degrees Celcius.
  2. Cut eggplants and zucchini (long ways) into 1cm thick slices. Drizzle with Cobram Estate Garlic Infused Olive oil and add salt and pepper to preference.
  3. Roast in the oven for about 10 minutes until soft.

Instructions For Sauce: 

  1. In a large saucepan, add 1 tbsp garlic infused olive oil. Add ground beef mince into saucepan and break into small pieces.
  2. When meat is brown, add Simply Wize Napolitana Pasta Sauce and simmer.

Instructions For Cheese/Egg Layer:

  1. In a separate bowl, mix all types of cheese and egg into a bowl.

Assembly: 

  1. In a large baking dish, spread thin layer of napolitana sauce, followed by thin layer of cheese and egg mixture, followed by a layer of roasted eggplants. Repeat for second layer using roasted zucchini.
  2. Finish with thin cheese layer and oregano on top.
  3. Bake for 30 minutes, then serve with your favourite low FODMAP vegetables.
